Recipe: Homemade Spicy Tomato Soup w/ Grilled Cheese

So I was sitting in the house one day just lounging and I had a hankering for tomato soup and grilled cheese. I know what you're all thinking: "Tiffany its summer time 90 degrees in the shade and you want soup?" YEAH! I DID BIG WHOOP WANNA FIGHT ABOUT IT?! LOL.
As a kid it was the best meal ever. Creamy, smooth, (always was the best part about it was the fact that it was so velvety smooth) warm soup with the hot ooey gooey crunchy buttery grilled cheese. I always had the canned tomato soup though from Campbell's. Always creamy a little sweet, strong tomato flavor. But it didn't taste like there was anything else in it but maybe some sweet cream, a little salt, a little pepper, plenty of tomatoes, and a little sugar to cut the acidity. That's it no depth of flavor. So now as an adult my palate has changed. Deeper richer more complex flavors are requested and needed when I cook.
I went to the fridge and I didn't have any fresh tomatoes. But I remember from a couple months ago I had a big can of peeled flash steamed Roma tomatoes I said to myself PERFECT! Then I looked in the fridge and I had these ingredients: garlic, mushrooms, onions, bell peppers, lemons. Hmm perfect combo for tomato soup! Here's how I made it:
Ingredients:
1 cup of diced or sliced Mushrooms
1 Large Onion, Chopped
1 Bell Pepper, Chopped
1/2 Large Can of Peeled tomatoes
2 tbsp of sugar
1 tbsp of Hot Sauce
1 tbsp of salt or seasoned salt
1 tsp of garlic powder
1/2 tsp of cumin
1 tbsp of Red Pepper flakes
1 1/2 tsp of Chili Powder
1 tbsp Black Pepper
1 bay leaf
A few dashes of Worcestershire Sauce
Parsley dried or fresh
1 Spoonful of Sour Cream or Greek Yogurt
Bacon for Garnish
Chop and or dice your veggies. In a saute pan cook them down until they are soft. Once cooked season them with salt and pepper and place in a blender. Blend until completely smooth.
In another pot cook your peeled tomatoes. Add the seasonings and hot sauce. Let it simmer for 15 minutes, slowly crushing and squishing the tomatoes until all the tomatoes are somewhat crushed and juicy. Remove your pureed veggies and place in a bowl or in the saute pan for a moment. Place your tomatoes in the blender and blend until velvety smooth. Add the veggie puree and stir together. Bring to a slow simmer on medium heat for 25 minutes.
Make your grilled cheese. I like mine traditional: American Cheese, White or Wheat bread and a little butter. Here's how you get fool proof grill cheese every time without adding extra butter to the pan.
Unwrap your cheese and place in between two slices of bread. Take your butter on margarine and butter both sides of the sandwich. Place in a hot pan and let it cook for 5 to 6 minutes on both sides until golden brown. Don't press the sandwich down you'll force out the cheese. Once the cheese is fully melted and the sandwich is brown on both sides remove and wait to serve.
Now once your soup is ready all you have to do is add a dollop of sour cream a sprinkle of parsley and some bacon and you've got a delicious filling, warm soup that is just so comforting!!!!
Finished Product! A meal fit for 2!
