Recipe: Lemony Lemon Brownies

I came across this recipe on Facebook. Its a great way to get awesome ideas for baked goods and really easy one-pot meals. Anyway the original recipe was very simplistic but it made the batter really oily and it did not come out correctly. The brownies were flat, they did not get fluffy or rise. It just wasn't the really tasty brownie I was looking for. So I scrapped them and modified the recipe for my own take on the lemon brownie. These brownies came out fluffy and like cake but still had a thick brownie like consistency. They are AMAZING!!!!! I can't wait until you try them!

Now on the picture they look awesome but they damn sure didn't turn out that way. Seriously I was highly upset but I think my modified version will be better!

Ingredients
½ cup unsalted butter, softened
¾ cup flour
2 eggs, large
2 tbsps lemon zest
2 tbsps lemon juice
¾ cup granulated sugar
¼ teaspoon sea salt
For the tart lemon glaze:
4 tbsp lemon juice
8 tsp lemon zest
1 rounded cup powdered sugar

Directions
1. Preheat the oven to 350 degrees. 2. Grease an 8×8 inch baking dish with butter and set aside. 3. Zest and juice two lemons and set aside. 4. In the bowl of an electric mixture fitted with the paddle attachment, beat the flour, sugar, salt, and softened butter until combined. 5. In a separate bowl, whisk together the eggs, lemon zest, and lemon juice until combined. 6. Pour it into the flour mixture and beat for 2 mins at medium speed until smooth and creamy. 7. Pour into baking dish and bake for 23-25 mins, should turn golden around the edges. 8. Allow to cool completely before glazing. Do not overbake, or the bars will dry. 9. Filter the powdered sugar and whisk with lemon zest and juice. 10. Spread 1/2 the glaze over the brownies with a rubber spatula and let glaze set. 11. Spread 1/2 the glaze over the bars, and let it set (not harden like most). 12. Cut into bars and serve.

Brownie Ingredients
1/2 c Sugar
1 tsp Vanilla
1 1/2 c Flour
1/4 c Lemon Juice
1/2 c Margarine
2 Eggs
1/2 tsp Salt
1 tsp Baking Powder

Lemony Lemon Glaze
8 tbsp Lemon Juice (You Can Add More if you want it really tart)
4 tbsp Lemon Zest
1 1/2 c Powdered Sugar
A pinch of salt
1 tsp Vanilla
*1 pk Cream Cheese
* 4 tbsp Milk

Instructions
Preheat the oven to 350 degrees. Beat combine all the dry ingredients in a separate bowl (except the baking powder). In the mixer add the vanilla, lemon juice, and margarine. Beat until combined. Then add the dry ingredients. Finally add the eggs one at a time on medium-high. This will prevent the eggs from cooking in the lemon juice. In the final minutes of mixing the batter add the baking powder. Allow it to incorporate for 2 to 3 minutes and then remove from the mixer. 


Using a 9x13 inch pan, pour your brownie mix in and make sure that it is even all the way around the pan. Place in the oven for 20 minutes. Any longer and they may over cook. Let the brownies cool for 45 minutes to ensure they are completely cooled. Mix up your icing. Add the powdered sugar to a bowl, along with the lemon juice, vanilla, salt, and lemon zest. Mix up by hand or blender whatever your fancy and you should have a thick white icing. If you want it more creamy add either a package of cream cheese or a 4 tbsp of Milk. The cream cheese will definitely make it a creamy icing but if decide to add milk your icing will still have that normal icing with just a touch of creaminess.

Cut into squares and serve!
