Easy Recipe: Breakfast Burritos

Ingredients
6 Dozen Eggs
1/2 Bottle of Picante Sauce
1 1/2 Rolls of Sausage
Mexican Blend Cheese
Sour Cream
Directions
Brown sausage in large frying pan. Scramble the eggs in pan (your going to need plenty of butter or margarine). Get a large pot add eggs, picante sauce, cheese and sausage. Simmer in a large pot until mixture is bubbling hot and cheese is fully melted. It should look like this. I know it doesnt look appetizing but I assure you its good! Many people give it the same look. But once you eat it you'll be surprised at the flavor:
This is what it looks like in the burrito. It has a minimal amount of cheese in the mix. If you add more cheese it will be thicker and lighter in color. The cheese is at your discretion. You can always add more or less of each ingredient it is totally up to you.
*Modifications
~ Instead of Eggs Try Egg Beaters. They look like regular eggs/taste like regular eggs and will give the illusion of being actual eggs.
~ Instead of Pork Sausage Try Turkey Sausage. Buy the ground turkey raw and add some sausage seasonings any kind you like. Be sure to add some fat of some kind olive oil, sunflower whatever you like. You need something to keep the turkey from drying out. When you mix it up place in the fridge the night before to allow the flavors to meld together. Add some oil to the pan and cook your turkey sausage. You can also do this recipe with chicken sausage. Its totally up to you.
~ Instead of Picante Sauce Try Your Own Pico de Gallo or Salsa. You will need lime juice, onions, tomatoes, cilantro, grated garlic, and salt/pepper. Add jalapeños or chipotle peppers (just jalapeños in adobo sauce) Be sure to seed the tomatoes before you add them to your Pico de Gallo. You can make your own salsa here's one recipe I got from Food Network:
Alton Brown's Salsa
Ingredients
6 Roma tomatoes, chopped
4 garlic cloves, minced
2 seeded and minced jalapenos, plus 2 roasted, skinned and chopped jalapenos
1 red bell pepper, fine dice
1/2 red onion, fine chopped
2 dry ancho chiles, seeded, cut into short strips and snipped into pieces
1 tablespoon olive oil
1 lime, juiced
Chili powder, salt, and pepper, to taste
Fresh scallions, cilantro or parsley, to taste
Directions
In a bowl, combine all ingredients. Place in refrigerator for up to 12 hours for flavor infusion.
Serve with tortilla chips.

~ Instead of Mexican Blend Cheese, Try a Low Fat Cheese like Kraft or Sergento. They have some very good cheese blends that would work in this recipe and it won't take away from the flavor because its low fat.
~ Instead of Flour Tortillas, Try a Vegan Flat Bread or Vegan Tortillas or Whole Wheat Tortillas, or even Pita Bread would be great!
~ Instead of Sour Cream, Try Low Fat Sour Cream or even Greek Yogurt. It has the same tartness actually its even stronger and I think it would add a completely different flavor to the dish.
