Easy Recipe: BANANA-Y Banana Bread

I love bananas and I've been a fan of Banana Nut Muffins since my childhood. But my mother and grandmother never made them from scratch. My mom used to purchase the banana nut muffins from hostess and they were always good never let me down on the banana. Then she started buying the big huge muffins that you can get in bulk from Costco, BJ's or Sam's Club (well now you can basically get them from anywhere). As an auntie of 6 I wanted to find a way to re-create those childhood memories with my nieces and nephews and eventually with my own children. So I started researching recipes for Banana Nut Bread. I made muffins as well but I wanted to test out the bread first. But when I came across the recipes and tested them out I got really small amounts of banana and lots of bread so I had to tweak the recipes to suit my liking and kind of mimic my childhood flavors and tastes.
Well here's the banana nut bread recipe with a few tweaks!
Ingredients
1 c Margarine (*Real Butter or Butter flavored Shortening)
2 c White Sugar
6 Ripe Bananas, Mashed
1/2 tsp Salt
2 tsp Baking Soda
1/2 c Walnuts
2 eggs
3 c All Purpose Flour
1 tsp Baking Powder
1 tsp Vanilla Flavoring (*1 Vanilla Bean, Split the bean use a paring knife scrape the vanilla out)
Directions
Preheat the oven to 350 degrees. Lightly grease two 9x5 loaf pans or spray with a non-stick cooking spray (Pam has a good butter flavored one and they have the baking Pam that has flour in it. Really good for cakes and loaves like this).
In a large bowl, cream together sugar and butter until it appears to be light and fluffy. Stir in the eggs one at a time, then add the bananas. Stir together the flour, salt, baking powder, and baking soda. Blend the flour mixture into the banana mixture. Stir just enough to evenly combine. Fold in the walnuts.
Split the mixture evenly between the two 9x5 loaf pans. Bake in the oven at 350 degrees for 50 to 70 minutes or until a toothpick or cake tester comes out clean (you can also you a wooden skewer for this). Cool for 20 minutes before removing to a wire rack. Allow the bread to rest on the wire rack until it completely cooled.

Brunch is a forgotten past time. Brunch time is usually between the hours of 11am and 3pm. At least thats what I was always taught. Instead of making it for breakfast for your family or a snack, make it for a party.
This banana bread is the perfect idea for a party. It can be paired with a really good homemade butter (orange vanilla bean butter or cinnamon butter) some delicious fried chicken and some really good herbed home fries w/ a pink grapefruit bellini. Maybe I'll post some more ideas or show you how its done in the near future. For now happy eating!
